Each ~90 lb quarter will vary slightly… but you will get the idea!

• ~30 steaks

  18 from a variety of T-bone, porterhouse, ribeye, NY strip, sirloin, or filet

  sirloin tip steaks

  chuck steaks

  cube steaks

• 6-8 roasts (rump, english, chuck, arm, or heel)

• 3-4 lbs fajita meat

• 3-4 lbs kabob meat

• ~30lbs of ground beef in 1lb packages

• Brisket

• Short ribs

• Soup bones or oxtail
