Our beef is all Nebraska grown, dry aged 14 days, then hand cut and wrapped at a traditional butcher shop and flash frozen to preserve freshness.

The entire beef is placed in a climate, humidity and air-circulation controlled environment. Natural enzymes break down the proteins to increase tenderness in the meat and to allow water to evaporate. Water doesn't have flavor, so the water leaves and the flavor stays t0 create an enhanced taste. 14 days later, it's time to make something special for dinner.
Traditional Butchering
The art of butchering can be appreciated in every package. Our beef is skillfully and artfully hand cut then wrapped in traditional white butcher paper, which not only looks classy but also does a fantastic job of keeping your beef fresh. Our beef is preserved naturally through flash freezing to retain freshness and an appealing bright pink color.
